Humidity, Storage and Disinfection control

Some food crops including potatoes, grapes, kiwi fruit, apples and persimmons need to be stored for months in a controlled environment requiring low temperatures and a high relative humidity. The main purpose of high relative humidity (usually best if over 90%) is to prevent weight loss due to dehydration, to help keep the food crisper and to improve its presentation. Current high relative humidity production devices have wetness problems when approaching the 90%+ relative humidity range. Wetness on foods means bacterial growth and spoilage.

The unique feature of Shira’s foggers is the ability to create relative humidities of up to 100% in storage facilities without wetness. The improvement in the storage of vegetables and fruit using Shira's foggers also offers beneficial results for those foods requiring short-term storage. Tomatoes, peppers, lettuce, artichokes, blueberries and cherries are examples of those fruit and vegetables which are stored only for a few weeks in chilled storage areas. A relative humidity of 95% or higher is beneficial for such short-storage and when this removes the problem of wetness by using Shira's foggers, the shelf life of the food is increased, dehydration losses are reduced and their presentation and crispness is maintained. Here again, the market is large. If it is beneficial to spray certain chemicals on foods, this can be carried out very effectively with Shira foggers.

"...The temperature at the commencement of storage was 8.5° C and
approximately three weeks before the end of storage the temperature was raised
to 12° C to reduce the sugar levels, while the relative humidity was 98%."
